Make it a Muffin!

This dinner idea works for several reasons: it is easy to make, it is a fun family activity, it has lots of options, and it supplies leftover for breakfast or lunch the next day. And who doesn’t love breakfast for dinner? And I think muffin monkey bread is my families new dessert favorite!

It Tastes Like Chicken

If we have chicken for dinner, or anything that resembles a chicken nugget, my kids will usually eat it. As fish is plentiful this time of year I thought catfish might also be “the other white meat” that the kids could enjoy. While fish dinners are easily accessible I am giving it a try for an easy family meal option, and I hope you do too.

This week, I am challenging my family with jambalaya. If anything could be the opposite of cheese pizza, jambalaya could be it. My philosophy this week: if you don’t like dinner one night out of the week - that is fine. Eat the jambalaya or make a sandwich! *This statement does not apply to babies, small children, or household pets.

That is what I went for this week: a simple and easy dinner that works great for leftovers when you have even less energy than normal to cook a meal.
