A constant theme I continue to visit in my blog is simplifying life. As I lesson our commitments to activities and events I am recommitting to the things that matter. Our evenings are becoming more meaningful and relaxed. And when our evenings are not rushed we tend to find the time for a better dinner. This week I am suggesting a very easy dinner option that is perfect for spring and a side dish that can double as a great take along item to a graduation party, picnic, or any other outdoor function that might be coming your way.

So how can you plan easy meals for your spring and summer? I’m really excited about a new concept that County Market stores have now. The new weekly ad will give you easy meal ideas and these meal solutions will be displayed in the store and grouped together to take the guess work out of the equation. I tested this new concept on Wednesday by trying out the first meal idea – Chicken Sliders!

This time of year we are inundated with sweets. My goal this week was to find a family friendly Easter brunch dish to counter the high consumption of chocolate, jelly beans and Cadbury eggs. In addition to being a crowd pleaser, it is also packed with fruits and vegetables and makes a healthy snack. So put down the peeps and check out Fruit & Veggie Sheet Pan Pancakes!

This week, Maureen's sister Julie shares one of her favorite family dishes - the burrito bowl! Julie breaks down her process into easy to fill categories to make sure everyone is getting a well balanced dinner. She also include a cleaner option. And as always, this is can be a very kid friendly meal for your picky eaters. Have you tried a jar salad for your lunch? Julie shares how she uses leftovers for her lunch the next day.
