Cake by the Campfire

Tis’ the season to go camping! Earlier this week I went to Cub Scout camp. And as luck should have it one of the planned activities was a demonstration on creating your own campfire meal. As the camp counselor and the kids made a campfire dessert I snapped some photos and wrote down the information to share it with you! Best of all: it only requires three ingredients, none of which need to be refrigerated.

What do you do when you have nothing planned for dinner and don’t want to eat out? Raid the pantry! That is exactly what I did this week and came up with a tried and true family favorite. Spaghetti and Meatballs! And even if you do not have oodles of time to make your noodles, have you ever tried zoodles? (yes, that sounded like a Dr. Seuss book, what can I say?)

Sometimes the simple things in life are just plain good. This pasta salad is one of those things. It is light summer fare, while also hearty enough for a meal. For me, it was also a great snack to pack for the kids. This gave me an easy and healthy option for the kids to refuel after a hot summer afternoon outdoors.
