Best Ever Bacon & Chicken Bake

When does the summer slowdown hit again? I’m thinking maybe someday when I hypothetically retire. School is out, but I still have three drop-offs to three different locations before even arriving at work. I have gotten smarter this go around, since the kids are in camp during the day I have scheduled nothing in the evenings, and it is awesome. Yes, we have to get up at the same time in the morning, but I feel like there is a little leeway on appearance of kids in the summer months. Did they get a bath? No, but they went swimming, same thing. Or maybe that is just me?
As the kids are exhausted by the time we get home in the evening I like to prepare something that doesn’t take too long, requires minimal ingredients, and most of the family will like. But who am I kidding, this is pretty much my M.O. all year long.
My kids love chicken and love bacon. So I put together a recipe that brings these two things together with my third favorite partner in crime – cheese! Other than seasoning, this is all you need for your main dish. I put together a recipe card, but once you have put it together it is an easy from memory dinner option:
The natives get restless in my house waiting for the main entrée, so I tend to slowly feed them their sides while the chicken is cooking. I’m not sure why, but my kids tend to eat more if I serve things one at a time. Here are some easy and light summer sides I put together:
*Picky Eater Alert – my picky eaters love naan bread as a side. Sprinkle it with some cheese and heat in the microwave for one minute. Cut it pizza style and kids think it is pizza. There are a million things you can make with naan bread. Click here for five fun naan dinner ideas.
Another picky eater option – cook at least one chicken breast plain and add a few strips of bacon to the pan by themselves.
Another great option is taking the leftover pieces of bacon and chicken to work/on a weekend day trip along with hamburger buns. As the chicken breast is cut in half width wise it is thin enough for a hearty chicken sandwich.
I hope you are enjoying these early summer days. The summer heat is still welcome and the novelty of swimming pools have not yet lost their luster. The upcoming school year is in the vague distance and we can all take a relaxing breath as we savor the sun along with a cool glass of lemonade.
