Veggie Burrito

I’m always looking for fun ways to add more fruits and vegetables to my family’s meals. The hardest part can be getting the kids on board. One tip I found that works really well is to make over some of my kids favorite foods. They love burritos and foods that they get to assemble themselves, so I thought why not make up a burrito bar filled with healthy offerings. Here is an awesome recipe that not only adds a healthy dose of fruits and veggies, but will also please the kiddos. Feel free to put out all of your family’s favorite vegetables in separate bowls and let the kids assemble their own burritos.
Crunchy Vegetable Burrito
Try adding your favorite vegetables to this yummy burrito!
•Prep Time: 10 minutes
Serves: 4
Cups of Fruits & Vegetables per Serving: 1
Ingredients
- 3/4 cup carrots, shredded
- 3/4 cup broccoli, chopped
- 3/4 cup cauliflower, chopped
- 2 green onions, thinly sliced
- 4 ounces cheddar cheese, shredded, low-fat
- 1/4 cup ranch salad dressing, low-fat
- 1/2 tsp chili powder
- 1 cup lettuce, torn into bite-size pieces
- 4 tortillas
Directions
1.Wash and prepare vegetables.
2.Combine chopped vegetables with cheese, dressing and chili powder; mix well.
3.spoon 1/4 cup vegetable mixture and 1/4 cup lettuce into the center of each tortilla.
4.Wrap each tortilla around the vegetable mixture.
5.Serve cold.
