Lemon Parmesan Shaved Brussels Sprouts

With a New Year fast approaching, the resolutions to do what we didn’t get around to doing the previous year are also coming up too. 

Maybe yours is to sign up for that gym membership you never had the chance to do or maybe it is to finally banish the Excess of Snack foods, Sweets and “Treats” out of your pantry. 

This is the time of year that we all feel like we can have a fresh start or a clean slate so to speak. 

It is a great time to stimulate positive changes in our life, but these changes need to be Simple, Gradual, and Realistic for them to Stick!!

So in light of keeping things simple……Here is a simple and fancy recipe to bring in the New Year with some gourmet tasting food!

Lemon Parmesan Shaved Brussels Sprouts

Prep Time: 20 minutes       Number of Servings: 4

Ingredients:

  • 1/2 small yellow onion, sliced thin
  • Juice of 1 lemon
  • 1 teaspoon honey
  • 1 teaspoon Dijon mustard
  • Freshly ground black pepper, to taste
  • Pinch of Salt (optional)
  • 1 tablespoon olive oil
  • 3 cups Brussels sprouts
  • 1/4 cup freshly grated parmesan cheese

Directions:

  1. Place the onion slices a bowl of cold water for about 15 minutes.
  2. In another bowl, whisk the lemon juice, honey, Dijon mustard, black pepper and salt (if using) until blended.  Add in the olive oil until it is completely combined.
  3. Cut the stems off each of the Brussels sprouts and remove any bruised outer leaves. 
  4. Using a sharp knife, thinly slice each of the Brussels sprouts into thin shavings like you would cabbage or you can use a mandolin.
  5. Then separate the shavings with your fingers so they look like cabbage slaw. Then drain the onions well.
  6. Place the Brussels Sprout shavings in a large serving bowl along with the onions and the mustard dressing. Toss gently, sprinkle in the parmesan cheese and toss one more time before serving.
