Grilled Chicken Satay with Coconut Lime Sauce

I love this grilled chicken satay recipe because it's not only easy, but it cooks so incredibly fast that you can have dinner on the table fast! Pair with grilled veggies like potatoes, asparagus, zucchini and summer squash.
Did I mention there is a delicious and easy to make coconut lime sauce that goes with the chicken satay?? Just put the lime in the coconut and mix it all up.......that's basically it. See the complete recipe below and enjoy!
Grilled Chicken Satay with Coconut Lime Sauce
Minutes to Prep/Cook: 28 minutes Number of Servings: 6
Coconut Lime Sauce Ingredients:
- ½ cup lite coconut milk
- 2 tablespoons unsweetened, finely shredded coconut
- Zest of 1 lime
- Juice of lime
- ¼ teaspoon honey
- ¼ teaspoon salt
- 1/8 teaspoon garlic powder
Chicken Satay Ingredients:
- Zest of 1 lime
- Juice of 1 lime
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1 ½ lbs. thin chicken breasts, cut into 16 strips and pounded thin
- Wooden skewers, soaked
Directions:
1. In a medium bowl, stir together the coconut milk, coconut, lime zest and lime juice. Stir in the honey, salt and garlic powder. Cover and refrigerate the coconut lime sauce until ready to serve.
2. Preheat your grill to medium-high heat, about 400 to 425 degrees F.
3. In a medium bowl, stir together the lime zest, lime juice, olive oil, & chili powder. Add the chicken strips to the bowl. Stir to coat the chicken well and then thread each piece of chicken lengthwise onto a skewer.
4. Grill the chicken satay for 3 to 4 minutes on each side, until cooked through. Serve warm with the cooled coconut lime dipping sauce.
