What to do with a ripe avocado?

Have you ever bought a few too many avocados that you had every intention of eating, but just never got around to it? 

Well if it’s ripe you know it won’t last long on the counter – You can always place it in your fridge to slow the ripening process, but it still needs to be used up quickly so it doesn’t go to waste!

Here are some ideas so you don’t trash another overly ripe avocado:

  • Make guacamole of course – Guacamole is great on toast with a fried egg or on top of an omelet
  • Add it to your blender along with your favorite smoothie ingredients for a creamy dreamy & filling smoothie that will make multiple servings
  • Mash it with some fresh chopped garlic, chopped celery, diced onion & shredded rotisserie chicken breast for a quick Chicken Salad
  • Dice it into small cubes and add to 1LB of lean ground meat to make your burgers extra juicy and full of heart-healthy fats!
  • Try it with some chopped tomatoes, mozzarella, balsamic vinegar, oil & pepper for a twist on caprese salad.

Orange Avocado Bruschetta

Prep Time: 15 minutes   Number of Servings: 12 (2 slices of bruschetta are a serving)

Ingredients:

  • 2 Chilean oranges
  • 1 large firm but ripe avocado, peeled and pitted
  • 3 tablespoons minced red onion
  • 1 tablespoon lime juice
  • 1 tablespoon olive oil
  • 1/2 to 1 small jalapeno pepper, stemmed, seeded and minced Freshly ground sea salt to taste
  • 24 baguette slices
  • Snipped fresh cilantro (optional)

Directions:

  1. Cut away peel from oranges then cut fruit into 1/4-inch cubes.
  2. Cut avocado into 1/4-inch cubes.
  3. Stir together oranges, onion, lime juice, olive oil, jalapeno pepper and salt in a medium bowl.
  4. Cut avocado into 1/4-inch cubes and very lightly fold into mixture.
  5. Spoon equal amounts of mixture onto baguette slices and top with cilantro, if desired.

Calories: 75    Protein: 1.5gm    Total Carbohydrates:  10gm    Fiber: 1.7gm   

Total Fat: 3.5gm    Cholesterol: 0mg    Sodium: 75mg
