Who is ready for summer?!?
Spring is here and my household is about to burst with excitement from anticipation. My kids are already asking daily if we can go swimming. I have given them the exact date we can head to the beach and have marked it on the calendar. My goal is to have so much outdoor fun that by September we are completely exhausted from sunshine, swimming, and pure summer goodness.
Last year in August when I said we were heading out to the pool that Saturday morning my son sighed, “Again?” I felt this was a great accomplishment on my part as a parent. It is a constant struggle to unplug the kids, uncomplicate our commitments, and just relax. Summertime can take us back to a simpler time of melting popsicles and catching lightning bugs.
So how can you plan easy meals for your spring and summer?
I’m really excited about a new concept that County Market stores have now. The new weekly ad will give you easy meal ideas and these meal solutions will be displayed in the store and grouped together to take the guess work out of the equation.
I tested this new concept on Wednesday by trying out the first meal idea – Chicken Sliders!
There are two options: you can view the recipe HERE to make your own chicken sliders in the Crockpot or you can buy a rotisserie chicken in the deli, along with the sides, and have a great spring and summer dinner ready to go after 10 minutes of prep.
I invited my parents over for dinner and the following items provided enough for five people with a little bit left over:

For picky eaters: you can leave the coleslaw off of the sliders and you could even omit the BBQ sauce from the shredded chicken. Here is the finished product:
