Suddenly...Awesome Summer Pasta Salad!

Here is how I know that I am not a foodie. In a recent marketing planning meeting I threw out, “I love Suddenly Salad.” The responses ranged from, “Do they still make that?” to “I liked that when I was a kid…”
Working in the grocery industry you quickly learn that you fall into two categories: those who know everything about food and those that thought they knew a little bit about food and now realize they know nothing. I fall into the second group. I had not even heard of the word “roux” before working for County Market. If you also have not heard of this word I am sure we would be great friends.
At first, I thought I could become a foodie. This was an exhausting task and the fact that it exhausted me told me I should readjust my goals and look at things differently. I am a simple cook. I now choose to embrace that, and I am much happier in doing so.
Suddenly Salad is one of my favorite summer dishes. To me, the classic pasta salad will never go out of style. This week I put together a pasta salad that is hearty enough for a meal, a good side dish addition to a gathering, and contains ingredients that work great as a snack or lunch on your next day trip.


Use extra/leftovers for a quick snack to pack for a daytrip:

Sometimes the simple things in life are just plain good. This pasta salad is one of those things. It is light summer fare, while also hearty enough for a meal. For me, it was also a great snack to pack for the kids. I sometimes struggle with packing something ahead of time that is not prepackaged junk that I throw in the bag as we are heading out the door. This gave me an easy and healthy option for the kids to refuel after a hot summer afternoon outdoors.
