7 Ways to have Chicken for 7 Days

It is officially the time of year where I near a mental breakdown. Otherwise known as back to school time. I know some parents are ready for their kids to get in the school year routine, but I am not in that group. The list of tasks to get ready for school seems never ending. Early bedtimes must be reinstated and my kids need to look halfway decent when they leave the house in the morning. I will give you an example of how I let my kids roll in the summer months:

This morning I woke up at 4am. By 5am I went ahead and just got up and did laundry and picked up the house. I never wake up this early. My mind is a jumbled mess. It is hard to let go of summer. We went old school with camping, a family reunion at Jellystone Park, and lots and lots of swimming. It reminded me of my own childhood and it is sad to see this season slip away. Next year the kids will be another year older and there are only so many years the kids will enjoy going down waterslides with me and being silly. Or as pictured below, laughing at me.

During all the chaos of reinstating school routines it is especially hard to find the time to plan meals. This week I wanted to give you something to get you through the week.

This idea is simple. Cook chicken breasts on Sunday to utilize throughout the week for a variety of easy dinners. If you are in a real hurry just grab one or two rotisserie chickens. For those that are not a fan of chicken this idea could be substituted with pulled pork. Click on the below links for my top recipe suggestions:
