Simple Stuffed Shells? Yes Please!

I’m not a huge pasta fan, and especially not in the summer. Sometimes though, a good comfort food just hits the I have managed to make it through my adult life thus far without making stuffed shells. I thought it looked really difficult and time consuming. Guess what? It's not.
I based this dish off a more complicated recipe that I then simplified. Florentine? Nope. Onions that my kids will not enjoy? Gone. A simple stuffed shell recipe? Done.
Here is my take on stuffed manicotti shells:

This dish will appease most picky eaters as it is not spicy and has a good neutral flavor. It is just warm cheesy goodness:
PICKY EATER ALERT: For those that do not like stuffed shells, I would recommend saving some of the pasta sauce and making an easy dish of spaghetti noodles and sauce.
As summer begins to fade and school season goes into full swing, I will start featuring some fall favorites. I suppose I should start investigating all things pumpkin. I hope you continue to enjoy these dog days of summer and find time to try out my new favorite pasta dish.
As this week is an Italian meal, I will share one of our recent family stops giving my kids some culture...in Niles, IL. This is a half size replica of the Leaning Tower of Pisa (they were more impressed with the arcade we visited soon after).
