Watermelon Lime Smoothie

Some of my favorite fruits to eat this time of year are watermelon, honeydew and cantaloupe!
Not only are they super sweet and versatile, but they can also help you cool off on a hot summer day and keep you hydrated!
This is an easy recipe that combines melon with refreshing lime juice to make for a sweet yet tangy drink that is way better tasting than plain water.
Serve this for breakfast, by the pool to cool you off, or for a snack that brings the best summer flavors together for a party in your glass!
Watermelon Lime Smoothie
Preparation Time: 10 minutes Number of Servings: 2
Ingredients:
2 cups chopped, seedless watermelon
1 cup low-fat or skim milk (can also use unsweetened almond, soy or coconut milk)
4 large mint leaves
1-2 teaspoons honey (optional)
8 to 10 ice cubes
½ cup freshly squeezed lime juice
Directions:
1. Add the watermelon, milk, mint leaves, honey (if using) and ice cubes to a blender. Pulse or puree until all ingredients are blended.
2. Pour in the lime juice and pulse two to three times to incorporate it into the smoothie. Pour into a glass and serve cold.
