Pumpkin Black Bean Stew

Pumpkin is the new black. It seems we can’t go anywhere lately where there isn’t pumpkin flavored everything. Pumpkin donuts, yogurt, coffee, bagels, English muffins, candles, air freshener; the list goes on and on. I love pumpkin because it reminds me of my favorite time of year---FALL. It’s hearty, delicious and filled with fiber and vitamin A. Here’s and awesome pumpkin inspired stew that’s easy to put together after a long work day or for that Sunday game day.
Pumpkin and Black Bean Stew
1 15oz can pure pumpkin
1 15oz can low sodium sweet corn, drained
1 15oz can low sodium black beans, rinsed and drained
2 cups of mild to hot salsa depending on your preference
4 cups Swanson Mexican Tortilla flavor Infused Broth
Combine all ingredients in large pot and bring to a boil. Simmer for 10 minutes and then enjoy. Makes 6 large servings
I like to serve this stew with a dollop of plain non-fat Greek yogurt, fresh cilantro and tortilla strips. You could also add chicken, beef or pork.
Options: If you only have plain chicken broth on hand you can use that and add 1 tsp. of chili powder and ½ tsp. cumin.
