Chocolate Cranberry & Pistachio Bark

Sometimes you just want a little something sweet and by all means you should!! Many holiday treats are hard to say no to especially if we only have them once a year...and some are even downright addicting!!
However, there are some treats that are easier to portion control or enjoy in a smaller portion compared to the rest.
For example the recipe below uses a Semi Sweet Chocolate rather than a Milk Chocolate or White Chocolate, which makes it taste slightly more bitter and rich in flavor!
It is much easier to have a small piece of Semi Sweet Chocolate or Dark Chocolate Bark rather than just one piece of Milk or White Chocolate Bark because they tend to not be as satisfying.
Have you ever noticed that once you eat some milk chocolate or white chocolate it almost has an addictive flavor that continues to linger on your tongue long after eating it, which makes you want to go back for another piece?!!
An even better choice would be to make this recipe below using half 100% Dark Chocolate (12oz) & the other half Semi Sweet Chocolate (about 12oz).

Chocolate Cranberry & Pistachio Bark

Preparation Time: 1 hour Number of Servings: Makes about 40 servings – 1 piece is a serving
Ingredients:
- 3/4 cup roasted, shelled pistachios, unsalted (3 ounces), coarsely chopped
- 2/3 cup dried craisins, reduced sugar
- 20 ounces Semi-Sweet Chocolate chips (about 2 bags) or 24 ounces Baker’s Semi Sweet (56%) chocolate (6 bars), finely chopped, divided
- 1 teaspoon freshly grated orange zest, optional
Directions:
- Line a baking sheet or jelly roll pan with aluminum foil. Add chopped pistachios, craisins, and orange zest together in a bowl and toss well to mix.
- Melt ¾ of chopped chocolate in a bowl in the microwave on 50% power for 30 seconds at a time (to prevent it from burning). Stir the chocolate each time until it has melted evenly.
- Stir in the last ¼ of the chopped chocolate and stir until it has completely melted and is smooth (you may need to warm the chocolate for another 30 seconds in the microwave).
- Add the craisins and pistachio mixture to the melted chocolate and stir well to mix.
- Quickly scrape out the chocolate mixture with a spoon or small spatula and plop onto the lined baking sheet in about 40 small clusters (or spread and break into pieces after hardened)
- Refrigerate uncovered until it has hardened (about 25-30 minutes).
- Using a butter knife or with clean hands, pop off the chocolate nuggets and store in an airtight container.
