Grilled Stone Fruit with Honey Lime Yogurt Sauce

Summer isn't over yet and neither is the love for grilled food! If you haven't already tried grilling different types of fruit....it is an absolute must!
Grilling fruit brings out their naturally sweet flavors by intensifying them. Just remember that not all fruits are made for the grill....
Stick to fruits that are firmer in texture like pineapple, grapes, & mango and avoid the ones that are high in water content or are very delicate like raspberries or pears.
Grilled Stone Fruit with Honey Lime Yogurt Sauce

Number of Servings: 4 Preparation/Cook Time: 20-25 minutes
Ingredients:
- 2 peaches, stone removed, sliced into wedges (should have 8 slices total)
- 2 plums, stone removed, sliced into wedges (should have 8 slices total)
- 2 nectarines, stone removed, sliced into wedges (should have 8 slices total)
- Canola or grapeseed oil (for brushing the fruit)
- Cinnamon, to taste
- Juice of 1 lime
- 4 Tbsp honey
- 8oz Greek yogurt (0% plain, non-fat)
- 4 medium sized wooden skewers or metal skewers
Note: If using wooden, remember to soak in water for about 10 minutes prior to using on the grill
Directions:
- Preheat the grill to medium heat. Skewer 2 pieces each of the peach, plum, & nectarine wedges alternating them onto 1 skewer.
- Repeat with the other 3 skewers. Lightly brush fruit skewers on both sides with canola oil and sprinkle with cinnamon.
- In a medium sized bowl combine the Greek yogurt, lime juice, honey, and several shakes of cinnamon. Mix well and chill in the fridge until ready to serve.
- Grill fruit kabobs over medium heat until dark grill marks form (about 2-3 minutes), turning fruit occasionally as needed.
- Pull the fruit kabobs off the grill & place them on a platter or you can take them off the skewers and place in a large serving bowl.
- Serve with the chilled honey lime Greek yogurt mixture.
Tips:
--Try using different fruit such as pineapple chunks, whole strawberries, cantaloupe or any other hardy fruit
--Save time & skip the skewers – just place fruit inside of an aluminum foil pack that has been sprayed with non-stick spray.
