No Bake Energy Bites

Now that its back to school time we could all use a little more energy to get through the long days. I love these easy, no bake bites. They are perfect for breakfast, lunch or a quick on-the-go snack. This recipe is super versatile and so easy, even the kids could do it!

No Bake Energy Bites
- 1 cup quick cooking oats
- 1/3 cup honey
- 1 cup unsweetened coconut flakes
- 1/2 dried cherries or cranberries
- 1/2 cup sunflower butter (Could also substitute almond or peanut butter)
- 1/2 cup ground flaxseed or wheat germ
- 1 tsp. vanilla extract
- Combine all ingredients in a medium sized bowl
- Chill in refrigerator for at least 30 minutes
- Roll into bite-sized balls
- Enjoy!!!
- Keep leftovers in refrigerator or freezer
I like to pair these with a small apple and a glass of low fat milk or plain yogurt.
