Turkey Waldorf Salad

I'm sure everyone is getting a little sick of turkey by now. I know that I've had turkey everyday since Thanksgiving. It can be hard to figure out creative ways to use up all that leftover turkey but here is one of my favorites. I love that its a cold dish and can be served for lunch or a light dinner. I pair it with whole grain crackers and serve over lettuce. You could also serve it on whole grain bread with some leftover cranberry sauce.

Turkey Waldorf Salad
Prep Time: 20 minutes Number of Servings: 6
Ingredients:
- 2 cups shredded leftover turkey meat (you can dice it if you like)
- 2 stalks celery, thinly sliced
- 1 crisp Gala apple, cored and chopped (can substitute any type of crisp apple)
- 1 cup red seedless grapes, halved
- 1/2 cup walnuts, toasted and coarsely chopped
- 1/2 cup non-fat, plain Greek yogurt
- 2 tablespoons mayonnaise (can also use low-fat)
- 1 teaspoon honey
- 1/4 teaspoon salt, or more if needed (optional)
- Freshly ground black pepper
Directions:
- In a large bowl, mix together the first five ingredients.
- Combine the Greek yogurt, mayonnaise, honey, salt and pepper in a small bowl and whisk until combined.
- Add dressing to turkey mixture and stir gently.
- Serve over a bed of lettuce with whole grain crackers or on a whole grain pita/bread.
