Ham and Pineapple Panini

Easter is right around the corner and a lot of us will be wondering what to do with all that leftover ham. I usually have quite a large amount of ham left, so I like to slice up the extras for sandwiches or cube the remaining ham for split pea or navy bean soup. This recipe is one of my favorite ways to use ham. Since ham is already a salty meat its nice to pair it with something a little sweet such as pineapple, apple or pear. The addition of the basil adds a real flavor punch.

Ham and Pineapple Panini
Number of Servings: 2 Preparation/Cook Time: 10 minutes
Ingredients:
- 4 slices whole grain bread
- 1 tablespoon olive oil
- 2 slices Sargento Ultra-Thin Cheddar-Jack cheese slices
- 2 slices leftover ham
- 2 slices fresh pineapple (1/4 of an inch)
- 6 fresh basil leaves
Directions:
- Layer 1 slice each of the ham, pineapple and cheese on 2 separate slices of bread. Then add 3 basil leaves to each slice of bread with toppings. Top each slice with the remaining 2 slices of bread.
- Brush both sides of the outside part of the bread with olive oil and place on a pre-heated Panini press.
- Grill for 2-4 minutes or until golden brown and serve immediately.
*You could also add Dijon mustard or a light mayo.
* If you do not have a Panini press, place sandwich on a grill pan or griddle and place a heavy object such as a cast iron skillet or foil covered brick on top of sandwich. Flip after a couple of minutes and continue cooking until brown and cheese is melted.
