Graveyard Sandwich Tray

This simple show-stopper is pleasing to the eye and taste buds! An assortment of turkey, chicken and ham salad sandwiches carved up like gravestones – this is the perfect Halloween platter. The salads are made with protein-rich canned chicken or turkey, tuna or ham, from your pantry.
Servings: 12
Ingredients
- 4 cans (5 ounces each) chunk breast of chicken or turkey in water, drained
- 1/8 teaspoon poultry seasoning
- ½ cup light mayonnaise
- 4 cans (6 ounces each) chunk light tuna in water, drained
- 1/8 teaspoon celery seed
- ½ cup light mayonnaise
- 4 cans (5 ounces each) chunk lean ham in water, drained and finely chopped
- 1/8 teaspoon pumpkin pie spice
- ½ cup light mayonnaise
- 24 slices white sandwich bread
- 1 head lettuce, finely shredded
- Ketchup and mustard, for garnish, in squirt bottles
Preparation
- To make any of the sandwich fillings, break the canned chicken, turkey, tuna or ham into flakes in a medium mixing bowl.
- Add the seasoning (poultry seasoning, celery seed, or pumpkin pie spice) and mayonnaise; mix to combine.
- Trim the bread slices into tombstone shapes.
- Toast in a toaster over until the bread is browned.
- Divide the filling, spreading evenly on half of the toasted bread slices.
- Assemble by topping with the remaining toasted bread slices.
- Decorate each sandwich with “R.I.P.” or skull and crossbones with ketchup or mustard in squirt bottles.
- Arrange shredded lettuce on a large tray and set the sandwiches on end – in the field of shredded lettuce – so they look like tombstones in a graveyard.
