Parmesan Zucchini and Spinach Sauté
Servings: 4
Ingredients:
- 3 medium zucchini, spiralized
- 1 Tbsp. olive oil
- 1 Tbsp. butter
- 2 cloves garlic, minced
- 2 cups raw, baby spinach
- ¼ freshly grated parmesan cheese
- Sea Salt, to taste
- Crushed Red Pepper, to taste
Directions:
- Heat large skillet to medium-high heat and add the olive oil and butter. Add garlic and cook for 1-2 minutes. Add zucchini and spinach and cook until spinach wilts.
- Add in parmesan cheese, salt and red pepper flakes and toss to coat evenly.
- Serve immediately
*Pairs well with shrimp
