Burrito Bowl with Shrimp
Serves: 1
Ingredients:
- 5 medium/large shrimp (peeled and deveined)
- 1 Tbsp. olive oil
- ¼ tsp.. chili powder
- ¼ tsp. cumin
- Pinch of sea salt
- ¼ cup cooked brown rice
- ¼ cup cooked rice cauliflower
- ¼ cup no salt added canned black beans (drained and rinsed)
- ¼ cup no salt added canned corn (drained and rinsed)
- ¼ cup prepared salsa
- 1 Tbsp. prepared guacamole
- 2 Tbsp. reduced fat shredded cheese
- 1 Tbsp. chopped cilantro
- Juice of 1/4 lime
Directions:
- Combine the shrimp with olive oil and spices in a small bowl.
- Heat a non-stick skillet over medium-high heat
- Cook shrimp until 2 minutes per side
- Ladle rice and cauliflower in a bowl and top with black beans, corn, cooked shrimp, salsa, guacamole, cheese, cilantro and lime juice.
